Chinese takeout used to be my favorite binge food until I started following a ketogenic lifestyle! These foods are usually loaded with additives and sweeteners that can really up the carb count and that’s not including the carbs that come from the white rice that is usually included. I decided to make a keto spin on this takeout staple.
Beef and Broccoli over Cauliflower Rice
For the cauliflower rice:
1 lb grated cauliflower
1/2 large red pepper diced
1-2 tablespoons olive oil
1/2 large yellow onion diced
1 tablespoon garlic powder
2 tablespoons soy sauce
Salt and pepper to taste
For the beef and broccoli
1 lb cut broccoli florets
1 lb thinly sliced flat iron steak
1/2 cup soy sauce
2 teaspoons minced ginger
1 tablespoon minced garlic
1 teaspoon fish sauce

1/2 teaspoon xanthan gum- https://amzn.to/2KFoKvi
1/2 teaspoon salt
Method: Cook cauliflower rice, add in onion and red pepper and olive oil. Season with salt, pepper, and garlic powder
Cover and cook on low.
Steam or lightly boil and drain your broccoli florets and set aside
Fry up your beef in oil and set aside
Turn down heat and whisk in soy sauce, fish sauce, sesame oil, chili sauce, ginger and garlic.
Mix salt and xatham gum together and sprinkle while whisking to combine
Turn up heat and add your broccoli and beef to coat.
