Keto Orange Chicken

I have been dreaming about orange chicken for a couple of months. I finally decided it was time to make a keto version. I needed a coating on the chicken that was fluffy and soft, like the one you’d get from your neighborhood Chinese restaurant.  I saw a recipe (not keto) on facebook where someone dipped chicken into pancake batter and fried it and I thought, hey…that might work! The result was a fluffy coated pancake chicken with an orange spicy sauce. I served it over cauliflower rice…it was a big hit!  This post contains affiliate links. The other secret to this recipe is the sugar free orange marmalade. This was actually really hard to find in store, so I ordered it online here:

You will need:
1 lb chicken tenders cut into 2 inch pieces 
Highkey Keto Pancake Mix:
1 egg
1 teaspoon salt
1 teaspoon garlic powder
2 tablespoons coconut oil (melted) or avocado oil
2 tablespoons almond milk or coconut milk, or heavy whipping cream
2 inches of oil or lard for frying. I used lard but you can use any oil that you prefer

For the orange chicken sauce you will need:
⅔ cup Smuckers Sugar Free Orange Marmalade:
2 tablespoons Chili Garlic Sauce:
1 teaspoon Sesame Oil
2 tablespoons Soy Sauce or Coconut Aminos
1 ½ cup chicken broth or I use this Chicken Broth Base:
½ teaspoon Xantham Gum-
½ teaspoon Salt
2 tablespoons rice wine vinegar 

Heat up your oil on medium heat. Add the chicken broth to a saucepan on medium heat. Add in the chili garlic sauce, sesame, oil, soy sauce, rice wine vinegar and orange marmalade. Mix the salt and the xantham gum together and sprinkle into the sauce while whisking. The mixing of the salt and the xantham gum will help the xantham gum disperse into the sauce more evenly. Set aside and let cool and thicken up

Pat your chicken dry

Mix ingredients for the pancake mix together. (Pancake mix, oil, garlic powder, almond milk, egg)

Dip the chicken into the pancake batter and drop into the oil. Fry until golden brown, drain on paper towel

Drizzle with orange chicken sauce, serve over cauliflower rice.
