Easy Keto Cannoli Cups

Try these easy Keto Cannoli Cups the next time you are craving something sweet! We used Cut Da Carb Flatbread wraps as the shell.

2 sheets cutdacarb wraps
1 cup whole milk ricotta cheese
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
3/4 cup powdered eyrithritol
1 tablespoon lemon juice
1/2 heavy whipping cream
1/4 cup sugar free chocolate chips
1 egg for egg wash

Method: Preheat oven to 350 degrees Cut Cut Da Carb Flat breads to fit your cupcake pan In a bowl, combine egg wash from one egg with a tablespoon of powdered eyrithritol and a dash of cinnamon. Dip or brush Cut Da Carb Flat breads with egg wash and allow it to absorb Carefully press into cupcake pan in a double layer Bake for around 5 minutes, check on them to make sure they aren’t burnt! Prepare the filling: In a bowl, combine ricotta, cinnamon, vanilla extract, eyrithritol, and lemon juice and mix until smooth. Save a small amount of powdered eyrithritol for garnish. In another bowl, beat the heavy whipping cream, Gently fold heavy whipping cream into the ricotta mixture. Fold in half of the chocolate chips. Carefully spoon mixture into the flatbread cups. Top with more chocolate chips and dust with powdered eyrithritol. Can be put into a freezer for 20 minutes to set.
